Tis the Season to Brioche

Sourdough Brioche

2/3 c warm cream 
2 tbs honey
4 tbd melted butter
4 eggs + 1 for wash
1 c starter (unfed)
4 c white flour
1 tsp salt

Dilute the starter in the warm cream. Add the honey, melted butter and eggs, lightly mix. Add the flour and the salt and mix with your hands until it comes together. Cover it with plastic wrap and a kitchen towel, and leave it alone for 8-10ish hours in a room temp-warm place. After the dough has doubled in size, split into 8-10 pieces and shape into smooth balls. Let rise for another 1-2 hours. Brush with egg wash (1 egg mixed with a couple tbs of water) and sprinkle with sesame seeds (or not). Bake at 375 degrees for 20-25 minutes. 

Enjoy as sandwich buns or as dinner rolls.

Tis the season to celebrate. So often that means gathering in the kitchens or around the dinner tables of parents, siblings and friend's. As the winter settles in, and the days get colder and darker, good company and good food helps us remember how and why we stay here year after year. Also, who doesn't love brioche...
